Can't help with the Spark, but the Aveo of a similar period, uses a combination of trims with simple plastic "snaps" which conceal screw fixings, and often then more robust plastic snaps that push into metal inserts. Due to the hard plastics used, even with plastic trim tools, it is very easy to scratch and mark the surrounding parts, but I will say that generally they are fairly easy and self explanatory to take apart.
Ed, next time you are out, have a look at the dash in a Peugeot 207. Around the centre info screen is a thick silver banded trim piece, that under all conditions projects a huge halo onto the screen. I used to regularly drive them as loaners, and it would drive me crazy.
